Pancake Parcels filled with hot smoked salmon, asparagus, and a creamy sauce.
Pancakes – they’re not just for Pancake Day! Pancakes are a great way to use up leftover cheese, sauce, fish, meat or veggies from a previous meal.
Make your crepes – you will need 1-2 per person.
To save time, you can buy pre-made pancake mix where you ‘just add water’. We have tried some for you and can confirm that it makes great pancakes! The mix does take little longer to cook through than a home-made pancake batter, so be patient and don’t try to flip it while it’s still gooey.
Alternatively, you can buy pancakes pre-made.
Blanch asparagus for 1 minute in boiling water, then transfer directly to iced water. Pat dry on a clean kitchen cloth. Char grill your asparagus in a lightly oiled griddle pan then, once cooled, chop into 3-4 bite-sized pieces.
Grate the lemon of all its zest. Mix half the zest and the juice from 1/4 the lemon into the cream cheese. spread each pancake with the cream cheese mixture.
Top with a generous amount of the flaked salmon, and add 6 pieces of char grilled asparagus – you can use a different vegetable if asparagus isn’t your thing. Tender stem broccoli works very well. Also, see the wilted spinach in the Ham & Cheese pancakes recipe.
Add a good squeeze of lemon juice over the salmon, then add a dollop of Donaldsons’ White Wine Sauce.
Fold the pancake in from 2 opposite sides, then fold in the other 2 opposite sides to create a neat parcel.
Add to a parchment lined ovenproof dish and bake in the oven at 180ºc for 20 mins until the parcels are set and crisp.
These can be eaten hot or allowed to cool and then eaten cold for a very fancy breakfast or lunch. The creamy sauce sets and holds everything together beautifully. Sprinkle with the remaining lemon zest and a good splash of lemon juice before serving.
This pancake parcel works really well for any breakfast filling, including ham & cheese (omit the Marinara Sauce), or even your favourite sweet fillings.
